I think I found the problem. the installation guide is confusing. so for production use, can I go with version 8? or stick to 7? will I be able to upgrade to 8 from 7 later on?

Hello,
At this moment, 7 > 8 you will not be able, so only a clean installation or you can use a hybrid 7h kernel https://docs.cloudlinux.com/cloudlinux_os_kernel/#hybrid-kernels
Let me know if you have any questions. Thank you.

Is centos 8 version production ready? I had a few issues with it when installing It. I tried it but it feels like its not ready yet. How would the hybrid version work? Isnt it essentially just centos7?

Yes, you’re right that version 8 is not so stable yet, at the moment the panels do not support it yet except DirectAdmin, but basically everything should be stable there. Hybrid is version 7 with a new kernel which has new features and new bugs, you can find more details in our article and documents here:
CloudLinux 8 with 4.18 kernel is ready for production
CloudLinux 8 kernel-related features and improvements
Thank you.
