how to do a good backup of AWS EC2 instance

Hopefully someone here is familiar with AWS EC2. We have setup an instance with CL and Plesk 9.5.2. This instance comes with a volume /dev/sda1 of 10GB and /mnt of 414GB. We have remounted this one to /var though:

Filesystem Size Used Avail Use% Mounted on
/dev/sda1 10G 4.6G 4.9G 49% /
/dev/sdb 414G 14G 380G 4% /var

When I take a snapshot of the volume it is only 10GB.

So I wonder what happens with the 414G if I ever need to restore this snapshot?
Also, is there a way to backup the complete 414G ? Under EBS Volumes I cannot find any reference to its.

Any guidance here is welcome to do a proper backup of the complete data.
